How pasta structure impacts its glycemical index Valérie Micard, Professor in Food Science and Nutrition in Montpellier SupAgro-JRU IATE, is looking for a good candidate for a 1 year post-doctoral position in her institute.
1) Montpellier SupAgro and the Join Research Unit IATE:
Montpellier SupAgro, International Center for Higher Education in Agricultural Sciences, is a leading institution in teaching and research, under the trusteeship of the ministry of agriculture and fisheries, widely open to the Mediterranean and Tropical Environments. (http://www.supagro.fr/web/).
Some key facts: 100 teacher-researchers among 350 academic staff, 1250 students, 21 Associated Joint Research Units (UMRs) with a wide range of high-level scientific skills. Montpellier SupAgro also enhances the development of activities destined to the transfer of technologies, the assessment of cognizable research, support to the innovation and creation of businesses and firms, dissemination of technical and scientific knowledge
UMR IATE (http://umr-iate.cirad.fr/): The Joint Research Unit Agropolymer Engineering and Emerging Technologies (UMR IATE) has the overall objective of contributing to the improvement of knowledge about the functions of plant products and their constituents to increase their performance both for human consumption that non-food items. 111 peoples and 22 PhD are currently working in UMR IATE.
Research themes: All the research activities of the UMR IATE are grouped under five complementary keys. These areas are multi-disciplinary and multi scales. The first lines relate to processing of Agricultural Resources (physical, biotechnology and physicochemical), the separation of structures with native generation of agro-polymers or functional molecules to their assembly and / or their functionalization with development of complex structures. This will strengthen or better express the functionality of components or control the transfer of materials and bio-materials, matrices and / or couples Product packaging. A final axis, transverse, is dedicated to the development of databases and methodologies for modelling and integration of knowledge and reasoning.
2) The project:
In 2009, the UMR IATE has demonstrated (in the national research project PASTALEG financially supported by The French National Agency and coordinated by Valérie Micard) that the structure of pasta made from legume and durum wheat impacts its nutritional properties, especially the rate of the starch hydrolysis. These results demonstrated in vitro are very promising but have to be confirmed by in vivo experiments. The research project to be conducted by the post-doc in 2010-2011 will study the impact of the fine pasta structure on its glycemical index.
The studies will be divided in two parts: structuration and characterisation of pasta (food science) and nutritional study on human subjects conducted in the Hospital of Montpellier (nutrition).
3) The candidate:
• Is a PhD in Food Science and/or Human Nutrition obtained after march 2007.
• Has at least two peer-reviewed scientific papers in the fields of cereal food science and/or human nutrition.
• Speaks English and/or French
• Has if possible already experience in teaching • Is or will be available before first September 2010 for one year maximum.
• Is interested to teach in French or in English at Master level (30 h) and to carry out research in a good scientific team.
• Is interested to work for one year in both fields of Food Science and Human nutrition.
